Makes 20 egg rolls<br />
<br />
2 Chicken Breast<br />
2 Cups Mexican Blend Cheese<br />
3-4 Tbsp Chili Powder<br />
2-2 1/2 Tbsp Cayenne Pepper<br />
1 Pkg Nasoya Egg Roll Wrappers<br />
1 Cup of Water<br />
<br />
1. Cover baking sheet with aluminum and spray with nonstick spray.<br />
<br />
2. Boil chicken breast and set aside to cool. Preheat oven to 425 F<br />
<br />
3. Mix cheese, chili powder and cayenne pepper in a bowl and set aside.<br />
<br />
4. Once chicken is cool enough shred it into pieces and mix into cheese mixture.<br />
<br />
5. With 1 egg roll wrapper with a corner closest to you, scoop 2-2 1/2 spoonfuls onto the egg roll in the center. With the closest corner wrap over ingredients leaving the other 3 edges pointing outward. Grab one of the sides and fold it to the same point as the first, copy this step on the other side as well. Tuck the points under the mixture and roll towards remaining point, make sure to stop a little ways from the closure and dab water along the edge to get a good seal. Place egg roll on greased sheet and repeat!!<br />

6. Once you have your pan filled (mine holds 12 total) lightly spray the tops of the egg rolls with your cooking spray. Let cook for 15 minutes and about halfway through flip them.<br />

I've been reflecting on the past few months since we brought Alec home and how many changes our little boy has already made, but not only has my sweet little stinker changed but so have I. Honestly when I first got pregnant last March I never really knew if I was going to be cut out for motherhood or how anything was going to be. There's no book that can prepare you for being a mother, its really a learned instinct that we're all born with, it starts the first moment you read that pregnancy test or the first time you see your little peanut on the screen. It immediately deepens the first moment that your child is placed on your chest and you can see his/her sweet round face looking back at you and you see what exactly God has given you and blessed you with. I've been doing a lot of reflection and seeing how great of a mother I am to my little boy, the sacrifices that I make and the things I do just because I am a mother now. My thinkings changed, I'm not just a teenager anymore, I have another life to think for and to put first before myself in everyday life. I find it VERY humbling to call myself a mommy and to know that someone needs me at every moment of every day.<br />

Once we got here they started my on a saline drip to get me nice and hydrated and started placing cydotech on my cervix to help thin me out. First round was placed at 7 and the second at 11 and they started doing the job and I dilated to 3 instantly. At around 12:50 I called the nurse in because I thought my water had broken but come to find out it hadn't so I rolled over on my side and asked Jake to rub my back because it was hurting really badly and thats when it happened, he said I got the deer in the headlights look and rolled over instantly, I knew my water had broken in that instant. My nurse came back in and checked and sure enough my water had broken and I was then dilated to 4cm and 90% effaced so I was progressing REALLY fast. At that point my contractions started hurting, before I was having them every minute to two minutes but wasn't feeling them AT ALL. I labored for 2 1/2 hours before finally caving and getting an epidural to help me rest a little bit so at 4 AM they gave me that and I slept till about 6 and then woke up so that my nurse could check me and then I started feeling the contractions ALL over again. They called the anesthetist back up to push more in me but that didn't work at all, they checked me again and I was 5cm though the dr said that it felt like I was fully dilated at first. She walked out and I started saying I NEED TO PUSH NOW, so Jake called front desk to let them know and the dr came in and rechecked me and sure enough I was fully dilated so they started having me do a few practice pushes cause I couldn't hold it and I kid you not that that hurt like heck without meds, I pushed about 3 times before begging them to get me some sort of pain meds. They called the anesthetists back up to see what they could do for me and they decided it would be best to do a spinal block, the first guy that was trying to do it stuck me a grand total of 40 times and as he was trying to place it I kept having terrible contractions and was pushing while sitting up on my poor baby. I was about at my breaking point because by then I was pushing 4 times per contraction and didn't know how much longer I could last so they called back down and asked the other guy to come up and see if he could get it in, first try he got it in the right spot and got me all numbed up and ready to go. They finished breaking the bed down in about 3 minutes and had me pushing, it took a grand total of 30 minutes for me to push Alec out and only came away with a 2nd degree tear. He weighed 8lbs 1oz and was 21in long and was born at 9:18AM on November 21, exactly 6 months after my amazing nephew was born! At first when he came out his cry was weak since they had me hooked up to magnesium so they watched him under the warmer for a bit to get him to crying really well. All in all it has been a great experience and I wouldn't trade it for the world. We have an amazing little boy that has filled us with so much love and joy that its simply hard to understand. Since then Alec has taken great to breastfeeding and is a real champ and keeps surprising the nurse here! </span></span><br />

I now weigh almost 6 pounds (like a crenshaw melon) and is more than 18 1/2 inches long. I'm shedding most of the downy covering of hair that covers me body as well as the vernix caseosa, the waxy substance that covered and protected my skin during my nine-month amniotic bath. I swallow both of these substances, along with other secretions, resulting in a blackish mixture, called meconium, will form the contents of my first bowel movement.<br />
<br />
At the end of this week, I will be considered full-term. (Full-term is 37 to 42 weeks; babies born before 37 weeks are pre-term and those born after 42 are post-term.) Most likely I'm in a head-down position. But if I'm not, mommies practitioner may suggest scheduling an "external cephalic version," which is a fancy way of saying he'll try to coax me into a head-down position by manipulating me from the outside of mommies belly.</span><br />

My fat layers — which will help regulate my body temperature once I'm born — are filling me out, making me rounder. My skin is also smoother than ever. My central nervous system is maturing and my lungs are continuing to mature as well. Mommies been a little nervous about</span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;"> </span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;">preterm labor</span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;">, but she'll be happy to know that babies born between 34 and 37 weeks who have no other health problems generally do fine. They may need a short stay in the neonatal nursery and may have a few short-term health issues, but in the long run, they usually do as well as full-term babies.</span><br />

<span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;">Mommy had an appointment yesterday and they cleared her for being able to have me naturally which means she doesn't have placenta previa!! My head was in the perfect place and when measured my body was measuring that of a 38w and I weighed 5.6lbs which is measuring to be 36w. Mommies uterus is also measuring big so it really could be any time that I could arrive but mommy wants to keep me in as long as possible. </span><br />

I'm rapidly losing that wrinkled, alien look and my skeleton is hardening. The bones in my skull aren't fused together, which allows them to move and slightly overlap, thus making it easier for me to fit through the birth canal. (The pressure on the head during birth is so intense that many babies are born with a</span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;"> </span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;">conehead-like appearance</span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;">.) These bones don't entirely fuse until early adulthood, so they can grow as my brain and other tissue expands during infancy and childhood. Mommies starting to get really anxious and starting to get everything together for my BIG arrival, she's been counting down the days till I 'should' be here!!!</span><span class="Apple-style-span" style="font-family: 'Trebuchet MS', sans-serif;"><br />

She's gaining about a pound a week and roughly half of that goes right to me. In fact, I'll gain a third to half of my birth weight during the next 7 weeks as I fatten up for survival outside the womb. I now have toenails, fingernails, and real hair (or at least respectable peach fuzz). My skin is becoming soft and smooth as I plump up in preparation for birth.</span><br />

I can turn my head from side to side, and my arms, legs, and body are beginning to plump out as needed fat accumulates underneath my skin. I'm probably moving a lot, too, so mommy may have trouble sleeping because my kicks and somersaults may keep her up. Take comfort: All this moving is a sign that I am active and healthy.</span><br />

My muscles and lungs are continuing to mature, and my head is growing bigger to make room for my developing brain. To meet my increasing nutritional demands, mommy will need plenty of protein, vitamins C, folic acid, and iron. And because my bones are soaking up lots of calcium, she needs to drink lots of milk (or find another good source of calcium, such as cheese, yogurt, or enriched orange juice). This trimester, about 250 milligrams of calcium are deposited in my hardening skeleton each day.</span><br />

I may now be able to hear both mommies voice and daddies as they chat with each other. I'm inhaling and exhaling small amounts of amniotic fluid, which is essential for the development of my lungs. These so-called breathing movements are also good practice for when I'm born and takes that first gulp of air. And I'm continuing to put on baby fat. While talking to my mother about my birth plan I stated that I only wanted my husband, Jacob, in the room while I was in labor and nobody else. Well my mother had a HUGE fit stating that she was going to be in the room with me the ENTIRE time of labor and I told her no that it was our moment not hers that she could come in the room once the baby was born. That infuriated her and she said she just wouldn't come and that once the baby was born that Jacob could call her and let her know. In one way I don't want my mother to be upset but it really is OUR moment not hers. My weight — a pound and a half — isn't much more than an average rutabaga, but I'm beginning to exchange my long, lean look for some baby fat. As I do, MY wrinkled skin will begin to smooth out and i'll start to look more and more like a newborn. i'M also growing more hair — and if my mommy and daddy could see it, they'd now be able to discern its color and texture.</span><br />

<span class="Apple-style-span" style="font-family: Times, 'Times New Roman', serif;">I'm growing steadily, having gained about 4 ounces since last week. That puts me at just over a pound. Since I'm almost a foot long (picture an ear of corn), I cut a pretty lean figure at this point, but my body is filling out proportionally and I'll soon start to plump up. My brain is also growing quickly now, and my taste buds are continuing to develop. My lungs are developing "branches" of the respiratory "tree" as well as cells that produce surfactant, a substance that will help my air sacs inflate once I hits the outside world. My skin is still thin and translucent, but that will start to change soon. Between now and the 28th week I'll be at my most mobile time but after that I won't have much room to move around so mommy will just have to wait patiently over the next few weeks!!</span><br />

With my sense of movement well developed by now, I can feel her dance. And now that I'm more than 11 inches long and weighs just over a pound (about as much as a large mango), mommy may be able to see me squirm underneath her clothes. Blood vessels in my lungs are developing to prepare for breathing, and the sounds that my increasingly keen ears pick up are preparing me for entry into the outside world. Loud noises that become familiar now — such as the dog barking or the roar of the vacuum cleaner — probably won't faze me when I hear them outside the womb.</span><br />
